East Rutherford, NJ — This Friday (Jan. 25) fans can watch the world’s greatest racing while dining on authentic Mexican-American cuisine in Pink at Meadowlands Racing & Entertainment.

The Mexican-themed buffet is $29.95 and features all the classic dishes. Guests can start their night with tortilla and hominy soup, chili con queso, and quesadillas. Buffet entrees include chicken and beef chimichangas, a make-your-own taco bar with all the fixings, black beans and a variety of salsas. Flan and tres leches cake round out this flavorful meal.
